Organization field is not sortable because the JQL doesn’t have a corresponding keyword in its syntax. As a result, the appropriate query cannot be created.
This issue is currently being considered to be included in one of the upcoming Jira Service Management updates. You can contribute to speeding up the process by voting for this feature on the official Atlassian Jira.
